Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugars: In a large mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and zucchini: Beat in the eggs one at a time, then add vanilla and zucchini, mixing until combined.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Mix wet and dry: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in oats, nuts, and raisins or chocolate chips if using.
- Bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 12–14 minutes, or until the edges are golden brown.
- Cool and serve: Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
- For a softer cookie, slightly underbake and let them finish setting on the baking sheet.
- You can glaze them with a simple powdered sugar icing for extra sweetness.
- Store in an airtight container for up to 4 days or freeze for up to 3 months.
