For the crust:

  • 1 and 1/2 cups crushed chocolate graham crackers
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs

For the topping:

  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • Chopped roasted peanuts for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix crushed graham crackers, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake the crust for 8 minutes, then set aside to cool.

  3. In a large bowl, beat the cream cheese until smooth. Add the peanut butter and sugar and beat until combined. Mix in sour cream and vanilla. Add eggs one at a time, mixing on low speed until just incorporated.
  4. Pour the filling over the cooled crust and smooth the top. Bake for 55–65 minutes, or until the center is almost set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Remove and chill in the refrigerator for at least 4 hours or overnight.

  5. For the topping, heat the cream in a small saucepan until simmering. Remove from heat, add chocolate chips, and stir until smooth. Spread over chilled cheesecake and sprinkle with chopped peanuts if desired. Chill for 15 more minutes before serving.

Notes

  • For a crunchier base, try using crushed peanut butter cookies instead of chocolate graham crackers.
  • Natural peanut butter is not recommended for this recipe due to its oil separation.
