Tomato and Pepper Topping:
- 2 cups cherry tomatoes, halved or quartered
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 red onion, finely chopped
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 6–8 minutes until crisp.
- Prepare the topping: In a bowl, mix cherry tomatoes, bell peppers, onion, balsamic vinegar, salt, pepper, and olive oil. Let sit for 10–15 minutes.
- Assemble: Spoon the tomato and pepper mixture onto the toasted baguette slices. Top with basil and serve.
