Ingredients:

  • 1 tablespoon olive oil
  • 1/2 pound breakfast sausage or bacon (cooked and crumbled)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 8 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 1 (28-ounce) bag frozen tater tots
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or nonstick spray.
  2. In a large skillet over medium heat, cook the sausage (or bacon) until browned. Drain any excess fat, then add diced onion and bell pepper, cooking until softened, about 3–4 minutes.
  3. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and pepper.
  4. Stir in the cooked sausage mixture and shredded cheddar cheese.
  5. Pour the mixture into the prepared baking dish and arrange the tater tots evenly on top.
  6. Bake for 40–45 minutes, or until the eggs are set and the tater tots are golden and crispy.
  7. Let cool for 5 minutes, then garnish with green onions if desired. Slice and serve warm.
