Description

This Tater Tot Breakfast Bowl is a hearty and satisfying morning meal featuring crispy baked tater tots topped with fluffy scrambled eggs, melted cheddar cheese, savory bacon or sausage, and fresh veggies. Perfect for a comforting brunch or quick breakfast, it brings together classic breakfast flavors with a crispy twist.

Ingredients

Scale

Tater Tots

  • 3 cups frozen tater tots

Egg Mixture

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Cooking

  • 1 tablespoon butter or oil

Toppings

  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon (cooked and crumbled) or 1/2 cup cooked breakfast sausage
  • 1/4 cup diced bell pepper
  • 2 green onions (sliced)
  • Hot sauce or salsa for serving (optional)

Instructions

  1. Preheat and Bake Tater Tots: Preheat the oven to 425°F (220°C). Arrange the frozen tater tots on a baking sheet in a single layer. Bake for 20 to 25 minutes, flipping halfway through, until they are golden brown and crispy on all sides.
  2. Prepare Egg Mixture: While the tater tots bake, whisk together the eggs, milk, salt, and black pepper in a medium bowl until well combined and slightly frothy for fluffy eggs.
  3. Scramble Eggs: Heat butter or oil in a nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until softly scrambled and just set. Remove from heat to prevent overcooking.
  4. Assemble Bowls: Once the tater tots are done baking, divide them evenly between serving bowls. Top each bowl with the scrambled eggs, shredded cheddar cheese, crumbled bacon or cooked sausage, diced bell pepper, and sliced green onions.
  5. Melt Cheese and Serve: Allow the cheese to melt slightly from the heat of the eggs and tater tots. For a fully melted effect, microwave each bowl for 20 to 30 seconds. Serve immediately with optional hot sauce or salsa for added flavor.

Notes

  • Customize your bowl with toppings like avocado slices, jalapeños, or sautéed mushrooms for extra flavor and texture.
  • You can prepare the scrambled eggs ahead of time and reheat them for a faster breakfast on busy mornings.
  • For a vegetarian alternative, simply omit the bacon or sausage or substitute with plant-based sausage.
