- 6 small flour tortillas (6-inch)

Instructions
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned. Drain excess grease, then add taco seasoning and water. Simmer for 5–7 minutes until the mixture thickens.
- Prepare Tortillas: Warm the tortillas in a microwave or on a skillet until soft and pliable.
- Assemble Meximelts: Place a portion of the seasoned beef in the center of each tortilla. Top with a blend of cheddar and Monterey Jack cheese, then add diced tomatoes and onions. Fold the tortilla over the filling, like a soft taco.
- Heat and Serve: Wrap each Meximelt in parchment or foil, then microwave for 15–20 seconds to melt the cheese and steam slightly. Serve hot with optional sour cream or hot sauce.

- For a more authentic Taco Bell flavor, use finely shredded cheese and let the Meximelts steam slightly before serving.
