Instructions

  3. Assemble Meximelts: Place a portion of the seasoned beef in the center of each tortilla. Top with a blend of cheddar and Monterey Jack cheese, then add diced tomatoes and onions. Fold the tortilla over the filling, like a soft taco.
  4. Heat and Serve: Wrap each Meximelt in parchment or foil, then microwave for 15–20 seconds to melt the cheese and steam slightly. Serve hot with optional sour cream or hot sauce.
