Fresh Cranberry Salsa:

  • 1 (12-ounce) bag fresh cranberries, rinsed and drained
  • 1 small bunch fresh cilantro, roughly chopped
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon salt
  • Zest of 1 lime

Instructions

  1. Prepare the Cranberry Salsa: Add the cranberries to a food processor and pulse until coarsely chopped. Transfer to a medium bowl.
  2. Combine Ingredients: Add the chopped cilantro, red onion, and jalapeño to the bowl and stir to combine.
  3. Make the Dressing: In a small bowl, whisk together the sugar, lime juice, salt, and lime zest until the sugar is mostly dissolved.
  4. Combine and Chill: Pour the dressing over the cranberry mixture and stir well. Let the salsa sit for at least 30 minutes before serving to allow the flavors to meld.
