Spicy Shrimp Mixture:
- ½ lb cooked shrimp (chopped)
- 2 tbsp mayonnaise
- 1–2 tsp sriracha
Additional Ingredients:
- 1 avocado (diced)
- ½ cucumber (diced)
- 1 sheet nori (cut into small strips or crumbles)
- 1 tsp soy sauce
- Sesame seeds for garnish
- Optional: green onions or pickled ginger for topping
Instructions
- Prepare Sushi Rice: Mix warm cooked sushi rice with rice vinegar, sugar, and salt. Let cool.
- Make Spicy Shrimp Mixture: Combine chopped shrimp with mayo and sriracha.
- Assemble Stacks: Layer rice, cucumber, avocado, and shrimp in a cup. Invert onto a plate.
- Finish: Top with nori, sesame seeds, and a drizzle of soy sauce. Serve.
Notes
- For a low-carb version, use cauliflower rice.
- Swap shrimp for crab if desired.
- Add wasabi to mayo for extra heat.
