Ingredients

Pasta:

12 ounces spaghetti or linguine;

Sauce:

1/4 cup olive oil; 6 large shallots, thinly sliced; 4 cloves garlic, minced; 1 teaspoon crushed red pepper flakes (adjust to taste); 1 can (6 ounces) tomato paste; 1/2 teaspoon salt; 1/4 teaspoon black pepper; 1 1/2 cups reserved pasta water; 1/2 cup grated Parmesan cheese;

Garnish:

fresh basil or parsley, chopped


Instructions

  1. Cook Pasta: Boil salted water, cook pasta until al dente, reserve 1 1/2 cups pasta water, then drain.
  2. Prepare Sauce: In a skillet, cook shallots in olive oil until caramelized. Add garlic, red pepper flakes, tomato paste, salt, and pepper.
  3. Combine: Gradually add pasta water to form a sauce. Toss in cooked pasta and Parmesan cheese.
