Description

Spicy Beef Quesadillas are a flavorful and cheesy Mexican-inspired dish perfect for a quick and satisfying meal. These quesadillas are filled with seasoned ground beef, jalapeños, and gooey cheese, all folded in a crispy tortilla. Serve with your favorite toppings like sour cream, salsa, or guacamole for a delicious treat!

Ingredients

Scale

Ground Beef Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and finely chopped
  • 1 packet taco seasoning mix (or homemade blend)
  • 1/2 cup water

Additional Ingredients:

  • 2 cups shredded Mexican blend cheese
  • 4 large flour tortillas (10-inch)
  • 2 tablespoons butter (for cooking)
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream, salsa, or guacamole (for serving)

Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a skillet. Cook ground beef until browned. Add onion, garlic, and jalapeño; cook until softened. Stir in taco seasoning and water; simmer until thickened. Cool slightly.
  2. Assemble Quesadillas: Place tortilla on a flat surface. Sprinkle cheese on one half, top with beef mixture, fold over to form a half-moon. Repeat with remaining tortillas.
  3. Cook Quesadillas: Melt butter in a skillet. Cook quesadillas until golden brown and cheese is melted, about 2–3 minutes per side.
  4. Serve: Slice into wedges and serve with optional toppings.

Notes

  • For extra spice, add cayenne pepper or hot sauce to the beef mixture.
  • You can swap ground beef for chicken or black beans.
  • Great as an appetizer, snack, or main dish.
