Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente; reserve 1/2 cup pasta water, then drain.
  2. Season and Cook the Chicken: Season chicken with Cajun seasoning. In a large skillet over medium-high heat, warm olive oil and cook chicken for 5–6 minutes until golden and cooked through; remove and set aside.
  3. Prepare the Sauce: In the same skillet, add butter, garlic, and onion; sauté for 2–3 minutes until softened. Add bell pepper and cook for another 2 minutes. Pour in heavy cream and chicken broth; bring to a gentle simmer. Stir in Parmesan cheese until sauce is smooth and creamy.
  4. Combine and Serve: Return chicken to the skillet along with pasta; toss to coat, adding reserved pasta water as needed for desired sauce consistency. Season with salt and black pepper to taste. Garnish with parsley before serving.
