Sausage Casserole:

  • 1 1/2 lbs pork sausages
  • 1 tbsp olive oil

  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 bell peppers, diced
  • 2 (14.5 oz) cans diced tomatoes
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 2 tbsp chopped fresh parsley (optional for garnish)

Instructions

  1. Brown the Sausages: Heat olive oil in a skillet and brown the sausages. Transfer to the slow cooker.
  2. Prepare the Casserole: Add onion, garlic, carrots, and bell peppers to the slow cooker. Stir in diced tomatoes, broth, tomato paste, spices, salt, and pepper.
  3. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours. In the last 30 minutes, add cannellini beans.
  4. Serve: Garnish with parsley and serve hot with bread or mashed potatoes.
