- 2 pounds beef chuck roast, cut into large chunks
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar

- 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 1/2 cups beef broth
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Additional Ingredients:
- 8 ounces rice noodles or lo mein noodles
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 3 green onions, sliced
- 1 tablespoon sesame seeds (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Prepare the Sauce: In a slow cooker, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, ginger, garlic, crushed red pepper flakes, and beef broth.
- Cook the Beef: Add the beef chunks to the slow cooker and toss to coat. Cook on low for 7–8 hours or high for 4–5 hours until tender.
- Shred the Beef: Remove the beef, shred it, then return it to the slow cooker.
- Thicken the Sauce: Mix cornstarch with water and add to the sauce. Cook on high for 15–20 minutes to thicken.
- Prepare Noodles: Cook noodles according to package instructions and drain.
- Combine: Stir noodles, carrots, and bell pepper into the slow cooker. Toss to combine.
- Serve: Garnish with green onions, sesame seeds, and cilantro. Serve hot.
Notes
- You can use udon, lo mein, or spaghetti noodles if rice noodles are not available.
- Add steamed broccoli or snap peas for additional vegetables.
