Description

For the Chicken:

  • 2 pounds boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 medium red onion, sliced
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Serving:

  • 6 pita breads
  • 1 cup chopped romaine lettuce
  • 1 large tomato, diced
  • 1/2 small cucumber, diced
  • 1/4 cup thinly sliced red onion
  • 1/2 cup crumbled feta cheese
  • 3/4 cup tzatziki sauce

Instructions

  1. Prepare the Chicken: Place chicken breasts in the slow cooker.
  2. In a small bowl, combine olive oil, lemon juice, red wine vinegar, garlic, oregano, cumin, paprika, salt, and pepper. Pour over the chicken and add sliced red onion. Cook on low for 4-5 hours or high for 2-3 hours until tender.

  3. Shred the Chicken: Remove chicken, shred, and return to the slow cooker.
  4. Warm pita breads and assemble gyros with chicken, lettuce, tomato, cucumber, red onion, feta, and tzatziki sauce. Serve hot.
