These Slow Cooker Chicken Gyros are a delicious and easy-to-make meal that brings the flavors of Greece right to your table. Tender, flavorful chicken is slow-cooked to perfection and then piled into warm pita bread with all the traditional gyro fixings. A must-try for any Greek food lover!
Ingredients
For the Chicken:
- 2 pounds boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 medium red onion, sliced
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For Serving:
- 6 pita breads
- 1 cup chopped romaine lettuce
- 1 large tomato, diced
- 1/2 small cucumber, diced
- 1/4 cup thinly sliced red onion
- 1/2 cup crumbled feta cheese
- 3/4 cup tzatziki sauce
Instructions
- Prepare the Chicken: Place chicken breasts in the slow cooker.
- Shred the Chicken: Remove chicken, shred, and return to the slow cooker.
In a small bowl, combine olive oil, lemon juice, red wine vinegar, garlic, oregano, cumin, paprika, salt, and pepper. Pour over the chicken and add sliced red onion. Cook on low for 4-5 hours or high for 2-3 hours until tender.
Warm pita breads and assemble gyros with chicken, lettuce, tomato, cucumber, red onion, feta, and tzatziki sauce. Serve hot.
Notes
- For a lighter option, use whole wheat pita or serve over a salad.
- Try using chicken thighs for a juicier result.
