Shrimp Mixture

- 1 tablespoon chopped green onion
- 1/2 teaspoon Old Bay seasoning (optional)
Sandwich
- 4 slices sourdough or hearty sandwich bread
- 1 cup shredded cheddar cheese (or a blend of cheddar and mozzarella)
- 2 tablespoons butter (softened)
Instructions
- Prepare the Shrimp Mixture: In a medium bowl, mix together the chopped shrimp, mayonnaise, Dijon mustard, lemon juice, garlic powder, green onion, and Old Bay seasoning until well combined.
- Assemble the Sandwiches: Lay out the bread slices and spread butter on one side of each slice. On the unbuttered side of two slices, layer half the shredded cheese, then spoon the shrimp mixture evenly on top. Add the remaining cheese over the shrimp and top with the second bread slice, buttered side facing out.
- Cook the Sandwiches: Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and crispy, and the cheese is melted.
- Serve: Slice the sandwiches and serve hot for immediate enjoyment.
