Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil. Toss cauliflower florets in olive oil, place on a baking sheet with the garlic. Roast for 30–35 minutes.
  2. Prepare the Soup Base: In a pot, sauté onion in butter. Add roasted garlic and cauliflower. Pour in broth, simmer for 10 minutes.
  3. Blend and Add Cheese: Purée the soup, stir in milk, cream, and cheddar cheese. Cook until creamy. Season with salt, pepper, and cayenne.
  4. Serve: Garnish with chopped chives or parsley and serve hot.
