Ingredients
Cauliflower:
1 large head cauliflower (cut into florets)
Roasted Garlic:
1 whole head garlic
Base:
1 tablespoon olive oil, 1 tablespoon butter, 1 small onion (diced)
Liquids:
2 cups vegetable broth, 1 cup milk, 1/2 cup heavy cream
Cheese:
1 1/2 cups sharp cheddar cheese (shredded)
Seasonings:
1/2 teaspoon salt, 1/4 teaspoon black pepper, pinch of cayenne pepper (optional)
Garnish:
chopped chives or parsley for garnish
Instructions
- Preheat the oven: Preheat oven to 400°F (200°C). Prepare the garlic and cauliflower.
- Roast: Roast cauliflower and garlic for 30–35 minutes until golden and tender.
- Sauté: In a pot, sauté onion in butter. Add roasted garlic and cauliflower.
- Cook: Pour in broth, simmer, then blend. Add milk, cream, and cheese. Season and heat gently.
