Ingredients
Scale
Cookie Dough:
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Add-Ins:
- 1 1/2 cups Rice Krispies cereal
- 1 cup mini marshmallows
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Add mix-ins: Gently fold in the Rice Krispies cereal, mini marshmallows, and white chocolate chips if using.
- Bake: Scoop tablespoon-sized amounts of dough onto the prepared baking sheet. Bake for 9–11 minutes until the edges are lightly golden and centers look set.
- Cool: Let the cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Avoid overmixing to keep the cookies soft and chewy.
- If marshmallows ooze out while baking, gently push them back in with a spoon while cookies are warm.
