- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/4 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease/flour a 9×5-inch loaf pan.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
- Combine wet ingredients: In a large bowl, mix sugar, oil, and eggs. Add pumpkin, water, and vanilla; mix well.
- Combine dry and wet ingredients: Gradually add dry mix to wet mix, stirring until just combined.
- Bake: Pour batter into pan, smooth the top, and bake for 55–65 minutes.
- Cool and serve: Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For added flavor, mix in 1/2 cup chopped walnuts, pecans, or chocolate chips.
- Store leftovers by wrapping tightly; bread can be frozen for up to 3 months.
