Penne Rosa Pasta:

  • 12 ounces penne pasta

  • 1 cup mushrooms, sliced
  • 1 zucchini, diced
  • 1 cup marinara sauce
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • salt and black pepper to taste
  • fresh basil for garnish

Instructions

  1. Cook Penne: Boil salted water, cook penne until al dente, reserving pasta water.
  2. Sauté Aromatics: Heat olive oil, sauté garlic and red pepper flakes.
  3. Add Vegetables: Cook mushrooms and zucchini until softened.
  4. Make Sauce: Stir in marinara sauce and cream, simmer. Add spinach.
  5. Finish Dish: Stir in Parmesan, adjust consistency with pasta water, add penne, season, and garnish with basil.
