Description

Indulge in the nostalgic flavors of classic Peanut Butter Lunch Lady Cookie Bars. These chewy and decadent bars are loaded with creamy peanut butter, oats, and chocolate chips, topped with a luscious peanut butter frosting.

Ingredients

Scale

Main Dough:

  • 1 cup unsalted butter (softened)
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups old-fashioned oats
  • 1½ cups semi-sweet chocolate chips (divided)

Peanut Butter Frosting:

  • ½ cup creamy peanut butter
  • 1 cup powdered sugar
  • 2–3 tablespoons milk

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and grease a 9×13-inch baking pan.
  2. Mix Wet Ingredients: In a large bowl, cream together butter, 1 cup peanut butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla, mixing until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  4. Add Mix-Ins: Stir in oats and 1 cup of chocolate chips.
  5. Bake: Spread the dough into the prepared pan and bake for 22–25 minutes until golden brown. Cool completely.
  6. Make Frosting: Melt ½ cup peanut butter, then combine with powdered sugar and milk until smooth.
  7. Frost and Serve: Spread frosting over cooled bars, sprinkle with remaining chocolate chips, and let set before cutting into bars.

Notes

  • These bars freeze well and are great for making ahead.
  • You can substitute quick oats if desired, but old-fashioned oats give the best chewy texture.
