- 1/4 cup powdered sugar (plus more for rolling)
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
Instructions
- Preheat the oven and prepare baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter, peanut butter, and sugar: In a large mixing bowl, cream together the butter, peanut butter, and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Add flour and chocolate chips: Gradually add the flour and salt, stirring until a soft dough forms. Fold in the mini chocolate chips.
- Shape and bake cookies: Scoop out tablespoon-sized portions of dough and roll them into balls. Place on the prepared baking sheet and bake for 10–12 minutes until lightly golden.
- Roll in powdered sugar: Let cool for 5 minutes, then roll the warm cookies in additional powdered sugar. Once fully cooled, roll in powdered sugar again for a snowy finish.
