Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Toss carrots: In a large bowl, toss the carrots with olive oil, garlic, salt, pepper, and thyme until evenly coated.
- Roast: Spread the carrots in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring once halfway through, until tender and lightly caramelized.
- Add cheese: Remove from the oven, sprinkle with Parmesan cheese, and toss to coat. Return to the oven for 3–5 more minutes, just until the cheese melts and forms a light crust.
- Serve: Transfer to a serving dish, garnish with fresh parsley, and serve hot.
