Description

These No-Bake Coconut Cream Balls are a delightful treat with a sweet coconut center coated in rich chocolate. Easy to make and perfect for any occasion.

Ingredients

Scale

For the Coconut Balls:

  • 2 1/2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract (optional)
  • 1/8 teaspoon salt

For the Chocolate Coating:

  • 1 cup white chocolate or semi-sweet chocolate chips, melted
  • 1 teaspoon coconut oil (optional, for thinning the chocolate)

Instructions

  1. Mix the Coconut Balls: In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, coconut extract (if using), and salt. Form a sticky dough.
  2. Shape the Balls: Roll 1 tablespoon of the mixture into a ball and place on a parchment-lined sheet. Repeat for all the mixture.
  3. Chill the Balls: Refrigerate the coconut balls for at least 30 minutes to firm up.
  4. Coat with Chocolate: Melt chocolate chips with coconut oil. Dip each coconut ball into the chocolate, coating fully.
  5. Set and Serve: Place the coated balls back on the parchment and refrigerate until the chocolate is set. Serve chilled or at room temperature.

Notes

  • For a decorative touch, drizzle extra melted chocolate or sprinkle shredded coconut on top before the coating sets.
  • Store in the fridge in an airtight container for up to one week.
