For the Coconut Balls:
- 2 1/2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon coconut extract (optional)
- 1/8 teaspoon salt
For the Chocolate Coating:
- 1 cup white chocolate or semi-sweet chocolate chips, melted
- 1 teaspoon coconut oil (optional, for thinning the chocolate)
Instructions
- Mix the Coconut Balls: In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, coconut extract (if using), and salt. Form a sticky dough.
- Shape the Balls: Roll 1 tablespoon of the mixture into a ball and place on a parchment-lined sheet. Repeat for all the mixture.
- Chill the Balls: Refrigerate the coconut balls for at least 30 minutes to firm up.
- Coat with Chocolate: Melt chocolate chips with coconut oil. Dip each coconut ball into the chocolate, coating fully.
- Set and Serve: Place the coated balls back on the parchment and refrigerate until the chocolate is set. Serve chilled or at room temperature.
Notes
- For a decorative touch, drizzle extra melted chocolate or sprinkle shredded coconut on top before the coating sets.
- Store in the fridge in an airtight container for up to one week.
