Ingredients
Scale
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup blackberry puree (strained to remove seeds)
For the topping:
- 1 cup fresh blackberries
- 2 tablespoons blackberry jam (optional for extra shine)
Instructions
- Prepare the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
- Make the filling: In a large mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into cream cheese mixture. Fold in blackberry puree until evenly blended.
- Assemble the cheesecake: Spread filling over the chilled crust, smoothing the top. Refrigerate for at least 4 hours or overnight until set.
- Finish with topping: Before serving, arrange fresh blackberries on top. If desired, warm blackberry jam slightly and drizzle over berries for a glossy finish.
Notes
- For a more intense berry flavor, swirl extra blackberry puree into the top of the cheesecake before chilling.
- You can also make this in individual dessert cups for easy serving.
