Description

Potato Poppers:

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)
  • Grated Parmesan cheese for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and prepare a baking sheet with parchment paper or greasing it lightly.
  2. Prepare the mustard mixture: In a large bowl, combine olive oil, Dijon mustard, whole grain mustard, honey, garlic, smoked paprika, salt, and pepper.
  3. Coat the potatoes: Add halved baby potatoes to the bowl and toss to coat them evenly with the mustard mixture.
  4. Roast the potatoes: Spread the potatoes cut side down on the baking sheet in a single layer. Roast for 25 to 30 minutes, flipping halfway through, until golden brown and crispy.
  5. Finish and serve: Remove from the oven, sprinkle with parsley and Parmesan if desired, and serve hot.
