Instructions
- Preheat the oven and prepare the muffin tin: Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
- Mix dry and wet ingredients: In a large bowl, whisk together the dry ingredients. In another bowl, whisk together the wet ingredients.
- Combine wet and dry ingredients: Add the wet mixture to the dry ingredients and stir until just combined. Fold in carrots, nuts, and pineapple if using.
