Description

This Mixed Berry Crisp is a delightful summer dessert that combines a medley of fresh berries with a crunchy oat crumble topping. Baked to golden perfection, it’s a perfect balance of sweet and tart flavors.

Ingredients

Scale

Mixed Berry Filling:

  • 4 cups mixed berries (such as blueberries, raspberries, blackberries, and sliced strawberries)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Oat Crumble Topping:

  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and cut into small cubes)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Mixed Berry Filling: In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until well coated and transfer to a greased 8×8-inch baking dish.
  3. Oat Crumble Topping: In another bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold butter and mix until crumbly. Sprinkle over the berries.
  4. Bake: Bake for 35–40 minutes until golden brown and bubbly. Let cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream.
  • Can use fresh or frozen berries; no need to thaw frozen berries.
  • Add chopped nuts like pecans or almonds for extra crunch.
