Description

These Mini Chicken Fajita Wonton Cups are a delightful fusion of Mexican flavors in a bite-sized, crispy shell. Perfect for parties or as a fun snack, these cups are filled with seasoned chicken, colorful bell peppers, and gooey cheese, creating a mouthwatering appetizer.

Wonton Cups:

  • 12 wonton wrappers
  • 1 tablespoon olive oil

Filling:

  • 1 cup cooked chicken breast (shredded)
  • ½ red bell pepper (thinly sliced)
  • ½ yellow bell pepper (thinly sliced)
  • ½ green bell pepper (thinly sliced)
  • ½ small onion (thinly sliced)
  • 1 teaspoon fajita seasoning
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese

Garnish:

  • sour cream
  • salsa
  • chopped cilantro for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin. Press a wonton wrapper into each muffin cup, shaping it into a small bowl. Bake for 7–8 minutes until lightly golden.
  2. Sauté filling: While the wonton cups bake, heat olive oil in a skillet over medium heat. Add the bell peppers and onion, cooking for 4–5 minutes until softened. Stir in the shredded chicken and fajita seasoning, cooking for another 2 minutes until heated through.
  3. Fill cups: Spoon the chicken-pepper mixture evenly into the baked wonton cups. Top each with a mix of cheddar and Monterey Jack cheese. Return to the oven and bake for 5–6 minutes, until the cheese melts.
  4. Garnish and serve: Remove from the oven and let cool slightly. Garnish with sour cream, salsa, and cilantro if desired. Serve warm.

Notes

  • For extra crispiness, bake the empty wonton wrappers a few minutes longer before filling.
