Wonton Cups:
- 12 wonton wrappers
- 1 tablespoon olive oil
Filling:
- 1 cup cooked chicken breast (shredded)
- ½ red bell pepper (thinly sliced)
- ½ yellow bell pepper (thinly sliced)
- ½ green bell pepper (thinly sliced)
- ½ small onion (thinly sliced)
- 1 teaspoon fajita seasoning
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
Garnish:

- chopped cilantro for garnish (optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin. Press a wonton wrapper into each muffin cup, shaping it into a small bowl. Bake for 7–8 minutes until lightly golden.
- Sauté filling: While the wonton cups bake, heat olive oil in a skillet over medium heat. Add the bell peppers and onion, cooking for 4–5 minutes until softened. Stir in the shredded chicken and fajita seasoning, cooking for another 2 minutes until heated through.
- Fill cups: Spoon the chicken-pepper mixture evenly into the baked wonton cups. Top each with a mix of cheddar and Monterey Jack cheese. Return to the oven and bake for 5–6 minutes, until the cheese melts.
- Garnish and serve: Remove from the oven and let cool slightly. Garnish with sour cream, salsa, and cilantro if desired. Serve warm.
Notes
- For extra crispiness, bake the empty wonton wrappers a few minutes longer before filling.
- You can also substitute steak or shrimp for the chicken.
