Description

These Meatball Smash Tacos are a fun twist on traditional tacos, featuring flavorful meatball patties smashed into tortillas and topped with cheese, salsa, and sour cream. Perfect for a quick and easy weeknight dinner!


Ingredients

  • Meatball Patties:

    1 lb ground beef, 1/4 cup breadcrumbs, 1 large egg, 2 cloves garlic (minced), 1/4 cup onion (finely grated), 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp salt, 1/4 tsp black pepper

  • Additional Ingredients:

    1 tbsp olive oil, 8 small flour or corn tortillas, 1 cup shredded cheddar or Monterey Jack cheese, 1/2 cup salsa or pico de gallo, 1/4 cup sour cream, 1/4 cup chopped cilantro, lime wedges for serving


Instructions

  1. Prepare the Meatball Patties: In a large bowl, combine ground beef, breadcrumbs, egg, garlic, onion, chili powder, cumin, smoked paprika, salt, and pepper. Form into meatballs and cook until browned.
  2. Smash and Cook: Flatten the meatballs into patties in the skillet and cook until fully done.
  3. Assemble Tacos: Warm tortillas, place a meatball patty on each, top with cheese, salsa, sour cream, and cilantro. Serve with lime wedges.

Notes
