- 3/4 cup granulated sugar
- 1 (3.4-ounce) box instant pistachio pudding mix
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup fresh lemon juice
- 2 tablespoons lime juice
- 1 teaspoon lemon zest
- 1/2 teaspoon lime zest
- 1/2 teaspoon vanilla extract
For the topping:
- 1 (21-ounce) can cherry pie filling
- 1/4 cup chopped pistachios
- lemon and lime zest for garnish (optional)
Instructions
- Preheat oven: Preheat oven to 325°F (163°C). Mix crust ingredients and press into pan. Bake and cool.
- Mix filling: Beat cream cheese, sugar, pudding mix. Add eggs, sour cream, juices, zests, and vanilla. Pour over crust.
- Bake: Bake for 55–65 minutes. Cool in oven, then chill in the refrigerator.
- Add topping: Spoon cherry pie filling over the top. Sprinkle with pistachios and zest before serving.
