For the Beef Layer:
- 1 pound ground beef
- 1 packet taco seasoning mix
- ⅔ cup water
For the Tomato Layer:
- 1 can (10 oz) diced tomatoes with green chilies (drained)
- 1 can (4 oz) diced green chiles (optional)
For the Creamy Layer:
- 1 cup sour cream
- ½ cup mayonnaise
- 1½ cups shredded cheddar cheese (divided)
- 1 small onion (thinly sliced)
For the Bisquick Crust:
- 2 cups Bisquick baking mix
- ½ cup water
Instructions
- Preheat oven to 350°F. In a skillet, cook the ground beef until browned. Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
- Prepare the Bisquick crust: Combine Bisquick and water to form a dough. Press into a greased 9×13-inch baking dish.
- Layer the casserole: Spread the cooked beef over the crust, then add the tomatoes with green chilies and green chiles. In a bowl, mix sour cream, mayonnaise, ½ cup cheddar, and sliced onion. Spread over the tomato layer.
- Top and bake: Add bell peppers and remaining cheddar. Bake for 35–40 minutes until golden brown. Let cool before serving.
