This John Wayne Casserole recipe is a Tex-Mex delight that’s perfect for busy weeknights. Layers of seasoned ground beef, tangy tomatoes, creamy cheese, and a Bisquick crust come together to create a hearty and satisfying dish that the whole family will love.

For the Beef Layer:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • ⅔ cup water

For the Tomato Layer:

  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 1 can (4 oz) diced green chiles (optional)

For the Creamy Layer:

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1½ cups shredded cheddar cheese (divided)
  • 1 small onion (thinly sliced)

For the Bisquick Crust:

  • 2 cups Bisquick baking mix
  • ½ cup water

Instructions

  1. Preheat oven to 350°F. In a skillet, cook the ground beef until browned. Drain excess fat and stir in taco seasoning and water. Simmer for 5 minutes.
  2. Prepare the Bisquick crust: Combine Bisquick and water to form a dough. Press into a greased 9×13-inch baking dish.
  3. Layer the casserole: Spread the cooked beef over the crust, then add the tomatoes with green chilies and green chiles. In a bowl, mix sour cream, mayonnaise, ½ cup cheddar, and sliced onion. Spread over the tomato layer.
  4. Top and bake: Add bell peppers and remaining cheddar. Bake for 35–40 minutes until golden brown. Let cool before serving.
