Chicken:

- 1–2 jalapeños, thinly sliced (seeds removed for less heat)
- 1 teaspoon garlic powder

Instructions
- Season the chicken: Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side, or until golden brown and nearly cooked through.
- Prepare the sauce: In a small bowl, whisk together the peach preserves, Dijon mustard, and apple cider vinegar.
- Simmer: Reduce heat to medium-low, pour the peach mixture over the chicken, and scatter the sliced jalapeños in the pan. Simmer for 5–7 minutes, occasionally spooning the sauce over the chicken, until the chicken is cooked through and the sauce has thickened slightly.
- Rest and garnish: Remove from heat and let rest for a few minutes before serving. Garnish with fresh thyme or cilantro if desired.
