Italian Sausage Potato Soup:

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 1 ½ pounds gold or russet potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Additions:

  • 3 cups fresh spinach
  • 1/2 cup heavy cream or half-and-half (optional)
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  1. Brown the Sausage: In a large pot, brown the Italian sausage until fully cooked, breaking it into crumbles. Drain excess grease if needed.
  2. Cook Aromatics: Add diced onion to the pot and cook until softened. Stir in garlic and cook until fragrant.
  3. Add Vegetables & Broth: Add carrots, potatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until vegetables are tender.
  4. Finish Soup: Stir in spinach and cook until wilted. Add cream if desired and adjust seasoning. Serve hot topped with Parmesan.

Notes

  • You can substitute kale for spinach if preferred.
  • For a lighter version, omit the cream entirely—it’s still flavorful and hearty without it.
