Italian Sausage Potato Soup:

- 3 medium carrots, peeled and sliced
- 1 ½ pounds gold or russet potatoes, peeled and diced
- 6 cups chicken broth
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
Additions:
- 3 cups fresh spinach
- 1/2 cup heavy cream or half-and-half (optional)
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- Brown the Sausage: In a large pot, brown the Italian sausage until fully cooked, breaking it into crumbles. Drain excess grease if needed.
- Cook Aromatics: Add diced onion to the pot and cook until softened. Stir in garlic and cook until fragrant.
- Add Vegetables & Broth: Add carrots, potatoes, chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until vegetables are tender.
- Finish Soup: Stir in spinach and cook until wilted. Add cream if desired and adjust seasoning. Serve hot topped with Parmesan.
Notes
- You can substitute kale for spinach if preferred.
- For a lighter version, omit the cream entirely—it’s still flavorful and hearty without it.
