Salad:
- 1 head romaine lettuce, chopped

- 1/2 cup diced cucumber
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/2 cup chopped salami
- 1/2 cup cubed provolone cheese
- 1/4 cup grated Parmesan cheese
Dressing:
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the Salad: In a large salad bowl, combine chopped romaine, cherry tomatoes, chickpeas, pepperoncini, cucumber, red bell pepper, red onion, salami, provolone, and Parmesan cheese.
- Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified.

Notes
