Description

These Honey Mustard Potatoes are a delicious side dish that pairs well with a variety of main courses. The sweet and tangy honey mustard glaze elevates simple roasted potatoes into a flavorful and satisfying dish.

Ingredients

Scale

Potatoes:

  • 2 pounds baby potatoes, halved

Honey Mustard Glaze:

  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the Honey Mustard Glaze: In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic powder, onion powder, salt, and pepper until smooth.
  3. Coat the Potatoes: Add the halved potatoes to the bowl and toss until fully coated in the honey mustard mixture.
  4. Roast the Potatoes: Spread the potatoes out on the prepared baking sheet, cut side down. Roast for 30–35 minutes, flipping halfway through, until golden brown and fork-tender.
  5. Finish and Serve: Remove from oven, sprinkle with chopped parsley, and serve.

Notes

  • For extra crispy edges, roast the potatoes without flipping.
  • These potatoes pair well with roasted meats, grilled chicken, or as a vegetarian side dish.
