- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the Oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
- Prepare the Honey Mustard Glaze: In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic powder, onion powder, salt, and pepper until smooth.
- Coat the Potatoes: Add the halved potatoes to the bowl and toss until fully coated in the honey mustard mixture.
- Roast the Potatoes: Spread the potatoes out on the prepared baking sheet, cut side down. Roast for 30–35 minutes, flipping halfway through, until golden brown and fork-tender.
- Finish and Serve: Remove from oven, sprinkle with chopped parsley, and serve.
