A delicious and quick weeknight meal, this Honey Garlic Shrimp & Zucchini Stir-Fry is a flavorful Asian-inspired dish that combines succulent shrimp, crisp zucchini, and sweet bell peppers in a savory honey garlic sauce. Serve over rice for a satisfying dinner.

Ingredients

Scale

Shrimp:

  • 1 pound large shrimp, peeled and deveined

Zucchini Stir-Fry:

  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper, sliced
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced for garnish
  • Cooked rice for serving

Instructions

  1. Prepare Sauce: Whisk together honey, soy sauce, rice vinegar, and red pepper flakes in a small bowl; set aside.
  2. Cook Shrimp: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook shrimp for 1–2 minutes per side until pink; set aside.
  3. Sauté Vegetables: Add remaining olive oil to the skillet. Sauté zucchini and bell pepper for 3–4 minutes until tender-crisp. Add garlic and cook for 30 seconds.
  4. Combine Ingredients: Return shrimp to the skillet, pour in sauce, and bring to a simmer. Stir in cornstarch slurry and cook until sauce thickens.
  5. Serve: Garnish with green onions and serve over rice.
