Description

Ingredients

1/2 teaspoon baking soda, 1/4 teaspoon baking powder, 1/2 teaspoon salt, 3/4 cup toffee bits, 1/2 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Blend Wet Ingredients: Beat in honey, egg, and vanilla extract until smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Mix Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add Toffee and Nuts: Stir in toffee bits and chopped nuts if using.
  7. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10–12 minutes until the edges are golden but centers are slightly soft.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes
