Mango Curd:
- 1 1/2 cups mango puree (fresh or canned, strained for smoothness)
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1 large egg
- 2 tablespoons fresh lime juice (or lemon juice)

- 6 tablespoons unsalted butter (cut into cubes)
Instructions
- Prepare the Mango Curd: In a medium saucepan, whisk together mango puree, sugar, egg yolks, whole egg, lime juice, and salt until smooth.
- Cook the Mixture: Place the saucepan over medium-low heat and cook, stirring constantly until the mixture thickens and coats the back of the spoon.
- Finish the Curd: Once thickened, remove from heat and stir in the butter until fully melted. Strain the curd through a sieve into a bowl, let cool, then refrigerate until thickened.
