  • ½ teaspoon salt
  • 2 to 3 tablespoons cold water

Instructions

  1. Prepare Tahini Mixture: In a food processor, combine the tahini and lemon juice. Process for 1 minute until whipped and creamy.
  2. Add Seasonings: Add the garlic, olive oil, cumin, and salt. Blend again for 30 seconds.
  3. Blend Chickpeas: Add the chickpeas and blend for 1–2 minutes, scraping down the sides as needed.
  4. Adjust Consistency: While the processor is running, slowly add cold water 1 tablespoon at a time until the hummus is smooth and reaches your desired consistency.
  5. Season to Taste: Taste and adjust seasoning as needed.
  6. Serve: Transfer to a serving bowl, drizzle with olive oil, and sprinkle with paprika and parsley if desired. Serve with pita bread, crackers, or fresh veggies.
