- ¼ cup shredded cheddar cheese
- ½ cup finely chopped whole wheat pancake or ¼ cup oat flour

Instructions

- Blend Egg Mixture: In a blender, combine eggs, egg whites, cottage cheese, maple syrup, vanilla extract, baking powder, salt, and oat flour or chopped pancake. Blend until smooth.
- Combine Ingredients: Transfer the mixture to a bowl and mix in the crumbled turkey sausage and shredded cheese.
- Fill Muffin Cups: Divide the batter among the mini muffin cups, filling each about ¾ full.
- Bake: Bake for 15–18 minutes until set and golden.
