  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Add-Ins:

  • 1/4 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseeds
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together oats, almond flour, baking soda, cinnamon, and salt.
  3. Combine wet ingredients: In a separate large bowl, mix almond butter, honey (or maple syrup), egg, and vanilla until smooth.
  4. Combine dry and wet ingredients: Add the dry ingredients to the wet ingredients and stir until combined.
  5. Add mix-ins: Fold in almonds, sunflower seeds, chia seeds, flaxseeds, and chocolate chips if using.
  6. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening slightly. Bake for 9–11 minutes, or until edges are lightly golden.
  7. Cool: Let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
