Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

Mushroom Stuffing:

  • 2 cups mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup low-fat mozzarella cheese
  • 1 tablespoon olive oil (for searing)

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet over medium heat, heat 1 tablespoon olive oil. Add mushrooms and cook until most liquid evaporates. Stir in garlic, thyme, salt, and pepper; cook 1 minute. Remove from heat and mix in Parmesan, spinach, and mozzarella.
  3. Cut a pocket into each chicken breast. Stuff with mushroom mixture and secure with toothpicks if needed. Season outside with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2–3 minutes per side. Bake in the oven for 18–20 minutes.
  5. Remove toothpicks before serving.
