Egg Mixture:
- 6 large eggs
- 2 tablespoons milk or water
- Salt and pepper to taste
Vegetable Filling:
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- 1/2 cup chopped fresh spinach
- 1/2 cup black beans (rinsed and drained)
- 1/2 cup shredded cheddar or Monterey Jack cheese
Additional:
- 4 whole wheat or low-carb tortillas
- Salsa and avocado slices for serving (optional)
Instructions
- Prepare Egg Mixture: In a bowl, whisk together the eggs, milk or water, salt, and pepper. Set aside.
- Cook Vegetable Filling: Heat olive oil in a large nonstick skillet over medium heat. Add diced onion and bell pepper and sauté until softened. Stir in spinach, then add black beans and cook until heated through.
- Scramble Eggs: Push veggies to the side of the skillet, pour in the eggs, and scramble until fully cooked. Mix everything together and remove from heat.
- Assemble Burritos: Warm tortillas, spoon in the egg mixture, top with cheese, fold in the sides, and roll up tightly into a burrito.
- Serve: Enjoy immediately or wrap in foil for future use.
Notes
- Customize with turkey sausage, hot sauce, or sweet potatoes.
- To freeze, wrap each burrito tightly in foil and store in a freezer-safe bag. Reheat in the microwave or oven.
