Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Prepare the cake batter: In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Alternate adding the dry ingredients and buttermilk, beginning and ending with dry ingredients. Fold in crushed pineapple and pineapple juice.
- Bake the cake: Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let cake cool completely.
- Make the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar, beating until creamy. Mix in pineapple juice and vanilla extract.
