  • 1 cup frozen peas
  • 1 cup green beans, trimmed and chopped
  • 2 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour mixed with 1/4 cup water (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil: In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Cook ground beef: Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  3. Add vegetables: Add onion, garlic, carrots, and celery. Cook until softened.
  4. Stir in seasonings: Add tomato paste, diced tomatoes, beef broth, Worcestershire sauce, thyme, oregano, bay leaf, paprika, salt, and pepper. Bring to a boil.
  5. Cook potatoes: Add potatoes, cover, and simmer until tender.
  6. Add peas and green beans: Stir in green beans and peas. Cook for additional 5 minutes.
  7. Thicken stew: For a thicker stew, add flour-water slurry and simmer until thickened.
  8. Serve: Remove bay leaf, garnish with parsley, and serve warm.
