- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup plain Greek yogurt (or dairy-free alternative)
- 2 tbsp mayonnaise
- 2 tbsp fresh lemon juice
- 1/2 ripe avocado
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 tbsp chopped fresh chives
- 1 small garlic clove, minced
- Salt and pepper to taste
- 1 cup shredded lettuce or spinach
- 4 large whole-wheat or gluten-free tortillas
Instructions
- Mash Chickpeas: In a mixing bowl, mash chickpeas with a fork until partially broken down.
