For the Chicken:
- 1 1/2 pounds boneless skinless chicken breasts
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/2 cup tzatziki sauce
Instructions
- Marinate the Chicken: In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 30 minutes, or up to overnight in the refrigerator.
- Grill the Chicken: Preheat a grill pan or skillet over medium-high heat. Cook the chicken for 6–7 minutes per side, until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing.
- Assemble the Bowls: Divide the cooked rice or quinoa among four bowls. Top each with sliced chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley. Drizzle with tzatziki sauce and serve immediately.

- You can substitute cauliflower rice for a lower-carb option.
