Meatloaves:

  • 1 pound ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Italian-style breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Topping:

  • 1/4 cup shredded mozzarella cheese
  • Extra Parmesan for garnish (optional)

Instructions

  1. Preheat oven and prepare tin: Preheat oven to 375°F and lightly grease a muffin tin or line with parchment.
  2. Mix ingredients: In a large bowl, combine ground chicken, Parmesan, breadcrumbs, milk, egg, garlic, Italian seasoning, salt, pepper, and parsley. Mix gently until everything is just combined—do not overmix.
  3. Shape and bake: Divide the mixture into muffin cups or form freeform loaves on a baking sheet. Bake for 20–25 minutes at 375°F until cooked through.
  4. Add topping: In the last 5 minutes of baking, sprinkle mozzarella on each meatloaf and return to the oven until melted and bubbly.
  5. Serve: Let rest for a few minutes before serving. Sprinkle with extra Parmesan and parsley if desired.
