Description

This Garlic Parmesan Chicken and Potatoes recipe is a delicious and easy one-pan meal that the whole family will love. Tender chicken thighs or breasts are seasoned with garlic, herbs, and Parmesan cheese, then baked alongside perfectly roasted baby potatoes until golden and flavorful.

For the Chicken:

  • 4 bone-in, skin-on chicken thighs (or 4 boneless chicken breasts)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

For the Potatoes:

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Optional: lemon wedges for serving


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the Potatoes: Toss the halved baby potatoes with 2 tablespoons of olive oil, half of the garlic, 1/2 teaspoon salt, 1/4 teaspoon pepper, and half of the Parmesan cheese. Spread on a baking sheet.
  3. Prepare the Chicken: Rub chicken with remaining olive oil, garlic, thyme, rosemary, salt, and pepper. Place chicken on top of the potatoes.
  4. Bake: Bake for 35–45 minutes until chicken is cooked and potatoes are tender. Sprinkle remaining Parmesan in the last 5 minutes.
  5. Serve: Garnish with parsley and serve hot with lemon wedges.

Notes

  • For extra crispy chicken skin, broil for 2–3 minutes at the end.
  • Adjust cook time if using bone-in chicken breasts or boneless thighs.
  • Add broccoli or green beans for a complete meal.
